Refreshing Summer Strawberry Basil Lemonade

It’s reaching 90 degrees where I am. Out the window, the sun hangs high against a backdrop of bright blue. The toes of adults and children alike are dipped in sand, green grass, natural bodies of water, pools. Sweat drips down on the faces of children running around at parks. Kites are flown as a small breeze passes by. Sunburns are slathered in fresh aloe.

When it comes to staying hydrated in the summer, a mason jar with a slice of lemon constantly makes an appearance for me. I don’t think twice about it as we sit under the sun for hours at a time. However, sometimes I’d like to change up my regular iced coffee/lemon water routine and add a little variety.

In summer, I’m more obsessed with fruit than usual. All I want is watermelon, cherries, mangoes, cantaloupe, kiwi, raspberries. Name the fruit and I’ll eat it. This drink is so refreshing and the perfect addition paired with a summer salad. It’s light and unique in flavor and switches up my water without making me feel guilty.

Here’s the recipe so you can enjoy a refreshing drink, guilt-free, too!

What you need:

  • 1 cup lemon juice (freshly squeezed or you can buy lemonade)

  • 18 strawberries

  • 16-21 basil leaves

  • 7 tablespoons of agave

  • 4-6 cups (I used a liter) sparkling water

  • half cup water

  • half cup sugar

How to make it:

  1. In a blender, add your lemon juice or lemonade with your 7 whole strawberries and 6 basil leaves. Blend.

  2. Add the blended lemon & strawberry mix to your pitcher. Stir in agave.

  3. Pour in your seltzer. Stir to combine.

  4. (Optional, omit if you prefer natural sugars) Make a simple syrup by adding half cup water and half cup white sugar to a pot over the stove. Stir to combine them together. Add 5 strawberries, sliced, to the pot and continue to stir once in a while. Once soften (about 5 minutes or so), take it off the stovetop and pour it into your pitcher. Stir to combine everything together.

  5. Slice about 6 strawberries, sliced, to the pitcher and 10-15 basil leaves. As the drink sits in the fridge, the stronger the flavor will become so keep that in mind. Refrigerate. You can also add ice to the pitcher but I preferred to pour it over ice in a cup. Garnish your drink with sliced strawberries and basil leaves.

  6. Alter as needed to reach your desired flavor (i.e. more strawberry slices, more basil leaves, more agave).
